Moist Bran Muffins Recipe
Ingredients
Raisin Mixture
1 1/2 cups raisins
3/4 cups brown sugar
3/4 cup hot water
1 1/2 tsp lemon juice (fresh is best)
3 tbsp butter
Batter
3/4 cup brown sugar
1 egg
1 1/2 tsp salt
2 1/4 cups natural wheat bran
1 1/2 cups flour
1 1/2 tsp baking soda
1 1/2 cups buttermilk Method
Preheat oven to 375°F.
Combine all Raisin Mixture ingredients in pan; bring to a boil and simmer for five minutes. Remove from heat and allow to stand until less hot.
In another bowl, mix together the brown sugbar, egg and salt. Add the slightly cooled raisin mixture and then stir in bran. In another bowl, mix together the flour and baking soda. Add it to the bran mixture, but do not stir. Dump the buttermilk on top, then mix until dry ingredients are moistened. Do not overmix.
