Web's Best Moist Bran Muffin Recipe

This bran muffin recipe is super moist and super good. It's not just another bran muffin recipe. It's the recipe you'll be saving to use over and over!

Trivia: Wheat bran is high in fibre and may contribute to heart health if combined with a low fat diet.

Moist Bran Muffins Recipe


Raisin Mixture

1 1/2 cups raisins
3/4 cups brown sugar
3/4 cup hot water
1 1/2 tsp lemon juice (fresh is best)
3 tbsp butter


3/4 cup brown sugar
1 egg
1 1/2 tsp salt
2 1/4 cups natural wheat bran
1 1/2 cups flour
1 1/2 tsp baking soda
1 1/2 cups buttermilk

Preheat oven to 375°F.

Combine all Raisin Mixture ingredients in pan; bring to a boil and simmer for five minutes. Remove from heat and allow to stand until less hot.

In another bowl, mix together the brown sugbar, egg and salt. Add the slightly cooled raisin mixture and then stir in bran. In another bowl, mix together the flour and baking soda. Add it to the bran mixture, but do not stir. Dump the buttermilk on top, then mix until dry ingredients are moistened. Do not overmix.

Pour the batter into a muffin pan like the Chicago Metallic Gourmetware Original Muffin Top Pan. Line with paper muffin cups. Bake for about twenty minutes. Makes 12.
