Ham and Cheese Breakfast Muffins Recipe
Ham and Cheese breakfast muffins make an excellent, fast breakfast for those busy days when time is short. They also make a lovely addition to a breakfast buffet.

Ham and Cheese Breakfast Muffin Recipe
This recipe makes 1 1/2 dozen muffins.
2 cups of whole wheat flour
1 cup regular flour
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon black pepper, ground
1/4 teaspoon of salt
1/4 teaspoon of dry mustard
1/8 teaspoon of cayenne pepper
1 1/3 cups yogurt
1/4 cup cooking oil (I prefer Canola)
2/3 cups chopped, cooked ham OR bacon
1/2 cup cheddar cheese, grated
1/2 cup red bell pepper, chopped
1/2 cup green onions, sliced
Preheat the oven to 400°F. Grease your muffin pans
OR line with paper cups.
In a bowl, thoroughly combine the dry ingredients.
In a separate bowl, mix together the yogurt, oil and eggs. A whisk (such as the Zyliss Quick Blend Whisk is a good tool for this process.
Add the yogurt mixture to the dry ingredients. Stir just enough to dampen the flour.
Fold in the meat, cheese and vegetables.
Spoon the muffin batter into your muffin pans. The cups should be approximately 75% full.
Bake your Ham and Cheese Breakfast muffins until done. This usually takes about twenty minutes or a little more. Test with a toothpick or cake tester to be sure they're ready to come out of the oven.
Lastly, cool your muffins in the pan for a ffew minutes, then loosen and remove from pans. They're ready to eat now - or you can store them for a day or so in the fridge. Enjoy.
