Web's Best Recipe for Pretzels

Yum! Who doesn't love a home made pretzel? With this recipe, you'll be turning out wonderful pretzels that you'll serve with pride.

And now, your first recipe.

#1: Recipe Pretzels

1 packet active dry yeast
3 teaspoons dark brown sugar
1 1/2 cup warm water (105 - 110 degrees f.)
1 tablespoon salt
4 cups all-purpose flour
cornmeal
coarse kosher salt

Combine yeast, 1 1/2 tsp brown sugar and water. Stand for five minutes until foamy.

Add remaining sugar and salt. Stir.

Add flour, a bit at a time. Mix by hand until well mixed.

Knead dough until it has a sheen (about seven minutes). Place kneaded dough in bowl, cover, and rise for 40 minutes.

Dust your area with cornmeal and a little extra flour. Divide dough into 12 pieces and roll to your preferred length and thinness. (Tip: thinner will be crispier). Form dough into pretzel shapes and move to a cornmeal-dusted baking sheet. Rise uncovered for an additional 30 minutes. Preheat oven to 425 degree. Bring a pot of water to boil.

Transfer risen pretzels to boiling water. Boil on one side for two minutes, flip and boil on other side for 1 1/2 minutes.

Transfer to a rack to drain.

Arrange on cornmeal-dusted baking sheet, sprinkle with kosher salt and bake for 20 minutes.

#2: Recipe Pretzels

1 package active, dry yeast.
4 cup unbleached flour
1 1/2 cup warm water
1 egg, beaten
1 teaspoon coarse salt
1 tablespoon sugar

Dissolve yeast in warm water. Add salt and sugar to yeast mixture. Blend in flour and knead dough until smooth, about 7 to 8 minutes.

Cover and let dough rise until double in bulk. Punch down.

Cut dough into 12 small pieces and roll into ropes. Twist ropes into pretzel shapes and place on greased cookie sheet.

Using a pastry brush, brush pretzels with egg and sprinkle with coarse salt.

Allow pretzels to rise until almost double in bulk. Bake at 425 degrees F. for 10 to 15 minutes or until browned.

Store in airtight container. Makes 12 6-inch pretzels.
