Web's Best Recipe Rhubarb Bread

Recipe Rhubarb Bread

2 cups finely diced, red rhubarab
1/4 cup sugar (first amount)
3 cups white flour
4 1/2 tsp baking powder
1 tsp salt
1 cup sugar (second amount)
1 tbsp grated orange rind
1/2 cup chopped nuts
1 egg
1/4 cup melted butter
1/2 cup orange juice

Preheat oven to 350 F.

Add 1/4 cup sugar to rhubarb and allow to stand.

Sift dry ingredcients together. Add 1 cup sugar, orange rind and nuts. Combine egg, butter, and orange rind. Stir into dry ingredients. Fold in rhubarb. Turn into wax-paper lined and greased loaf pan.

Bake for 1 hour or until done. Cool on rack in pan for 10 minutes. Turn out, peel off wax paper and cool recipe rhubarb bread to room temperature.

Recipe Rhubarb Bread with Apple

1 1/2 cups finely chopped rhubarb
1 1/2 cups apples, peeled and chopped
1 1/2 cups sugar
2/3 cup vegetable oil
2 tsp vanilla extract
4 eggs
3 cups flour
2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp baking powder
1/2 cup chopped nuts

Preheat oven to 350 F.

Grease bottoms only of two loaf pans.

Mix the rhubarb, apples, sugar, oil, vanilla extract and eggs in a large bowl. Stir in the flour, baking soda, salt, cinnamon, cloves, baking powder and nuts. Pour into the pans and bake for 50 to 60 minutes or until done. Cool in pans for 10 minutes. Loosen the sides of loaves from the pans; remove from the pans. Cool recipe rhubarb bread completely before slicing.
