Web's Best Zucchini Bread Recipe

A zucchini bread recipe is moist, sweet, delicious, and good for you!

Trivia: The zucchini was introduced to this country in the mid 1900's by the Italians and is now grown by more gardeners than any other squash.

You'll find three recipes for zucchini bred on this page. The first is a quick bread recipe with the emphasis on nutrition. The second recipe zucchini bread is made with yeast, and the third is another quick bread, this time flavored with chocolate.

Recipe Zucchini Bread

1 1/2 cup white flour
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 tsp nutmeg
1 tsp vanilla
1/2 cup wheat germ
1 cup oil
2 cup wshed, finely shredded, unpared zucchini, well-packed
2 cup granulated sugar
3 eggs
1/2 cups chopped walnuts or other nuts

Preheat oven to 325 F. Sift dry ingredcients together.

Beat eggs, oil, sugar, vanilla and zucchini together. Add remaining ingredients, beating slowly. Batter will be thin.

Line 2 loaf pans with double lined and buttered wax paper. Pour the batter into pans and bake for 1 hour or until done. Turn recipe zucchini bread out onto racks, remove wax paper. Cool.

Recipe Zucchini Bread Made with Yeast

1 lb grated zucchini
2 tbsp salt
1 pkg dry yeast
1 1/4 cup lukewarm water
3 1/2 cup flour
Optional but recommended: Bread Dough Enhancer. Use per manufacturer's instructions.
-Olive Oil -- for brushing

Place alternate layers of grated zucchini and salt in a colander. Let drain over sink for 30 minutes. Squeeze out excess moisture.

Combine the yeast with 1/4 cup of lukewarm water, stir, and wait for 15 minutes.

Place the zucchini, yeast, and flour in a bowl. Stir together, and add just enough of the remaining water to obtain a rough dough.

Knead on a floured surface until smooth and elastic. Return the dough to the bowl, cover with a plastic bag, and rise until doubled in size, about 1 1/2 hrs.

Grease a baking sheet. Punch down dough and knead into a tapered cylinder. Place on baking sheet, cover, and rise in a warm place until doubled in volume, about 45 mins.

Preheat oven to 425 F. Brush with olive oil and bake until golden, 40 to 45 mins. Cool recipe zucchini bread on a wire rack.

Recipe Zucchini Bread with Chocolate

1 cup salad oil
2 cup sugar
3 eggs, beaten
2 oz baking chocolate, melted
2 cups grated and peeled zucchini
1 tsp vanilla
3 cup flour
1 tsp salt
1 tsp cinnamon
1/4 tsp baking powder
1 tsp baking soda
1 cup chopped nuts
1/2 cup chocolate chips

Preheat oven to 350 F.

Cream oil and sugar together. Add the beaten eggs. Fold melted chocolate into egg mixture along with zucchini and vanilla. Sift flour with salt, cinnamon, baking powder and baking soda. Stir into zucchini mixture, along with nuts and chips and mix thoroughly. Spoon into 2 well-greased 9" x 5" pans. Bake your recipe zucchini bread for 1 hour or until done.
